Apricot

The apricot must sing! Meet the sweet-tart wonder of the fruit world.

Apricots are a powerhouse of flavor in the tiniest package. I like to call them the golden gems of the orchard. Boy oh boy, do they bring that perfect balance of sweet and tart to my botanical sauces! With their delicate, juicy sweetness and just the right punch of tanginess, apricots offer a mellow fruity warmth that’s like a cross between peaches and plums—but with their own unique zing. They’re smooth, bright, and even a little floral, adding depth and dimension to everything they touch. These beauties originated in Central Asia, where they’ve been brightening up dishes for thousands of years. And here’s the kicker: apricots are loaded with vitamins and antioxidants, so they don’t just taste good—they’re good for you too. Flavor, history, and health all in one delicious bite? Yep, apricots have it all!

"How do I choose flavors? I really don’t know. I started off with apricot because I like apricots. Then it becomes a game to see what other fruits would work. My wife likes strawberries, so I did some strawberry. It just comes to me."
