Cinnamon

Cinnamon is the spicy zest of life wrapped in the warmth of a hug—and it’s oh-so-tasty.

Why does cinnamon stir up the most wonderful taste memories? Because it’s in everything we love that’s familiar. From cinnamon buns in the morning to apple pie at the holidays to pumpkin spice everything in the fall, cinnamon is the warming flavor hug that makes everything better. It’s like part of the family! And it just tastes really, really good. I love that it’s strong, hot, pungent, earthy and brilliantly bitter. That just makes it the perfect taste-builder for my sweet-hot botanical sauces. Cinnamon comes from a tree bark which is then ground to a spice. You can see the bark if you hold a cinnamon stick. I love everything about its warming spice. But don’t forget, it has some amazing anti-inflammatory benefits and can even lower blood sugar levels.

"How do I choose flavors? I really don’t know. I started off with apricot because I like apricots. Then it becomes a game to see what other fruits would work. My wife likes strawberries, so I did some strawberry. It just comes to me."
